Princess Lindsey








Today was my niece's 3rd birthday. I can't believe she is growing up so fast!!! When first asked about her birthday cake she requested a cake with backyardgens, Ariel and Handy Mandy all surrounded by sprinkles. Luckily my sister narrowed it down to a princess party theme and every princess needs a castle right?
I searched cakecentral and a few other websites for inspiration. I was challenged with figuring out how to make the torrents and not make the cake too complicated for transport. I used sugar ice cream cones and painted them with food coloring and added a little sparkle for fun. The top pointed cones were coated in icing and then covered in sprinkles. The cake was two boxes of chocolate baked in 9” cake pans. With one 6” for the top. The moat was blue food coloring and piping gel. Rocks were fondant along with the lettering. I used a stone mat to make an impression around the outside of the cake to make it look like a castle… Added vines and flowers to make it look girly and princess like… The best part of making cakes for my nieces is the delivery. Lindsey and Lilly were both so excited about the cake, which was awesome. Lindsey turned to me and said "Aunt Amy, I love you". Melts my heart every time I hear that... That's the best thank you you can get...
